The smoked chestnut purée carries the earthy warmth of chestnuts roasted over fire, while the toasted chestnut crunch in dark chocolate gives it structure and bitterness. A thin Granny Smith apple and lemon jelly cuts the sweetness before the chestnut ganache closes it, silky and scented with honey and vanilla. The shape recalls a chestnut just fallen from its husk, with that characteristic pale tip and a golden autumn shimmer.
