This year, Delicious Diamonds joins Prove Leiria Doçaria with a live demonstration, and there was only one bonbon we could bring: Winter Ember.

Winter Ember was born from a memory that is very much ours: the smell of roasted chestnuts in the streets of Leiria on cold autumn afternoons, and Dona Maria, the chestnut seller so many people in Leiria know. With this bonbon we won 1st place in the Dessert category of the 16th Cociña con Castaña de Galicia competition, in A Coruña.

Inside, several layers complement each other: smoked chestnut purée, apple and lemon gel, toasted dehydrated chestnut and chestnut ganache. All of it is wrapped in a thin milk chocolate shell.

During the demonstration you will be able to follow some of the stages of making the bonbon, from preparing the fillings to assembly. I will walk you through the choices behind each component and the small technical details that make all the difference in a handmade bonbon.
